Vineyards located in the Mogoro area, on medium calcareous soils.
PROCESSING
Brief skin maceration of the must on the skins. Control of the fermentation temperature and use of selected yeasts. The second fermentation is obtained by slow fermentation at a temperature of 13°C, using the Charmat Method. Its characteristics are best appreciated within one or two years of its commercialization. Optimal storage conditions are essential.
CHARACTERISTICS
Color: pale straw yellow, bright and with brilliant reflections. The perlage of good persistence comes from the Charmat method.
Perfume: it has delicate aromas of freshly baked bread crust, white fruit and aromatic herbs.
Taste: the flavor attack is fresh, the aromatic progression delicate, the finish pleasant and dry.
COMBINATIONS
It is an excellent aperitif but can also accompany dishes with delicate flavours: from crunchy sautéed vegetables to fish, even raw, to cold rice salads, as long as without pickles or garlic.
