PROCESSING AND AGING
Alcoholic fermentation in steel and malolactic fermentation in barrique. Aging for 4-6 months in new and semi-new barriques. It has a high aging potential, even 3-4 years.
Color: Straw yellow with golden reflections
Bouquet: Rich and complex with wild flowers, hawthorn, wisteria, rosemary, thyme, lavender, pineapple and flint
Taste: Dry, lively, full and enveloping, with fruity and aromatic pulp. The finish is rich and persistent with rich mineral sapidity and elegant fullness
Excellent combination with fish first courses, grilled fish and stewed octopus, but also shellfish and fresh cheeses.
