PROCESSING AND AGING
After the destemming-crushing follows a maceration of about 12-14 days at a temperature of 26-28 ° C. After racking, the wine is transferred to vitrified cement vats where the malolactic fermentation takes place and subsequently transferred to barriques for an aging of at least 12 months. After this period, the maturation is completed in vitrified concrete vats.
Color: intense ruby red with violet reflections, tending to garnet with aging.
Bouquet: intense, persistent and complex. There are hints of currant and cherry. Spicy notes of cinnamon follow.
Taste: round on the palate, velvety tannins accompany an exuberant and generous structure. Harmonic finish.
