Surrounding territory Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestones of Miocene origin, medium hilly location, sub-arid climate.
PROCESSING
After destemming and crushing, maceration takes place for approximately 12-14 days at a temperature of 26-28°C. After racking, the wine is transferred to vitrified concrete tanks where it undergoes malolactic fermentation and is subsequently transferred to barriques for aging for at least 12 months. After this period, maturation is completed in vitrified concrete tanks.
CHARACTERISTICS
Color: intense ruby red with violet reflections, tending towards garnet with aging.
Perfume: intense, persistent and complex. Hints of blackcurrant and cherry are recognisable. Spicy notes of cinnamon follow.
Taste: rounded on the palate, velvety tannins accompany an exuberant and generous structure. Harmonious ending.
COMBINATIONS
Ideal for red meats, furred game and mature cheeses.
