ORIGIN
Vineyards owned by the winery, characterized by sandy and clayey soils, trained with spurred cordon, Sorso (SS).
PROCESSING
Once harvested, the grapes are cooled through the use of cold rooms for 24 hours at 0°C, a process also called cryo-maceration. We then move on to soft pressing, in the complete absence of oxygen and a 4-hour pause for maceration. Fermentation takes place in 5hl barrels at a controlled temperature of 12°C. This is followed by 6 months in tonneau and in steel on the fine lees at a controlled temperature, as well as a month of refinement in the bottle.
CHARACTERISTICS
Color: intense straw yellow with greenish reflections.
Perfume: fine and persistent, notes of ripe white pulp fruit and iodine, which alternate with light spicy notes.
Taste: mineral, savory and soft.
COMBINATIONS
Excellent with appetizers and light fried foods. Perfect with seafood and shellfish-based first courses.
