PROCESSING AND AGING
Obtained from the vinification of native Sardinian grapes. The skin / must contact takes place in stainless steel vats for about a week at a controlled temperature of around 25 ° C, with daily pumping over and punching down. It is aged in stainless steel vats and in the bottle for a few months before being marketed.
Color: Intense ruby red with violet reflections.
Bouquet: Intense, persistent bouquet with hints of ripe fruit.
Taste: Warm, with a good acid-tannic balance, good structure and gustatory persistence.
Excellent when paired with land appetizers, important first courses, game and red meats in general, aged pecorino.
