PROCESSING
Maceration with the skins for 8-10 days and fermentation at a controlled temperature, soft pressing of the pomace. Aging for 18 months in first and second passage barriques and tonneaux and at least 12 months in the bottle.
CHARACTERISTICS
Color: bright, a beautiful garnet red color with ruby nuances and good consistency.
Perfume: fine and elegant, immediately recognizable sensations of black berry fruit, spicy notes in a graphite finish.
Taste: explosive entry into the mouth, important freshness and flavor blend into a silky and floral tannin, excellent persistence.
COMBINATIONS
Perfect with important mature cheeses and game. Try it with tagliolini with red partridge ragout and porcini mushrooms.
