PROCESSING AND AGING
Pressing and maceration of the skins at a controlled temperature, in stainless steel vats for about 10 days, during which alcoholic fermentation begins. We then proceed with the malolactic one, essential for softening the wine. It is then transferred to new wooden barrels, where it matures for three months, before bottling and the final refinement in the bottle for a further three months.
Color: intense ruby red, not very penetrable.
Bouquet: vinous and fruity sensations, which are then enriched by hints of spice and freshly ground coffee.
Taste: enveloping sip, it highlights a tannic consistency integrated into the general structure.
Perfect with grilled or braised red meats, it is also to be tried with savory, even slightly spicy first courses.
