PROCESSING AND AGING
Destemming-pressing and fermentation of the marc in the must in stainless steel containers at a controlled temperature for a period of about two weeks. Once the alcoholic and malolactic fermentation has been completed, it is transferred to fine-grained French oak barrels where it stays for up to eighteen months, in order to increase its structure, softness and taste-olfactory complexity. After maturation, the final refinement in the bottle follows for twelve months.
Color: intense ruby red, with light garnet reflections.
Bouquet: rare, complex notes of plums and blueberries, sweet spices, bay leaves, juniper, tobacco and chocolate.
Taste: softness and structure, freshness and strong sapidity, dense tannic texture, intense and persistent.
Accompanies roasts, grilled meats, game, embellished with aromas and spices and medium and long-aged cheeses.
