PROCESSING AND AGING
The vinification is carried out at a controlled temperature of 24 ° C. The 48-hour cold pre-fermentation maceration follows the fermentation maceration which lasts on average 10 days. Frequent punching down and pumping over ensure optimal extraction of the color and aromas contained in the skins. Refinement continues in cement and steel vats where controlled micro-oxygenation favors the preservation of delicate fruity and floral notes.
Color: intense red with violet reflections.
Bouquet: the nose releases delicate floral hints of rose and violet accompanied by notes of red undergrowth fruit.
Taste: in the mouth the evident acid note and the pronounced but soft tannin denote the youth of the wine.
Red wine for the whole meal. Its versatility allows it to be combined with cold cuts appetizers, first and second courses of the Mediterranean tradition and with fatty fish dishes seasoned with sauces and flavored with spices.
