PROCESSING AND AGING
Vinification with soft pressing and natural cold settling. It ferments slowly in cement at a controlled temperature. This is followed by 7 months of aging on the fine lees in a small ovoid cement vat, in order to mature and obtain an important structure and minerality.
Color: golden straw yellow
Bouquet: aromas of peach blossom and pear
Taste: savory and slightly aromatic, in a centered and balanced context
It goes well with slightly aged cheeses, but also spaghetti with clams and bottarga, well-seasoned fish.
