PROCESSING AND AGING
The vinification foresees a period of fermentation maceration of about 10 days, carried out at a temperature never higher than 26 ° C. 90% of the aging takes place in steel for about a year and a small part, about 10%, is aged in 15-hectolitre chestnut barrels for two months. Subsequently it refines for about three months in the bottle. It is bottled not before the March following the harvest and, thanks also to the Bovale, it expresses itself at its best in the following two / three years.
Color: Bright red rich in purple hues.
Bouquet: the scent of racking is added to that of fresh berries.
Taste: In the mouth it reveals structure, and is characterized by the balance between freshness, sweet tannins and persistence.
First courses also au gratin, seasoned with meat or cheeses; roasts and semi-aged cheeses. Also good with pizza and with fatty fish, cooked roast or with tomato sauce.
