PROCESSING AND AGING
After a cold maceration on the skins for one night, the must is left to rest for 12 hours at a low temperature to be able to gently clarify it. Inoculation with selected yeasts of the cleaned part and fermentation at 14 ° C for about 14 days. Racking after fermentation begins the refinement period in contact with the noble lees for the entire period preceding bottling.
Color: straw yellow.
Bouquet: elegant and complex with notes of sweet spices, dried flowers and pleasant hints of toasted fruit.
Taste: full and persistent, with a pleasant flavor and a delicately almond finish.
Ideal as a combination with seafood dishes or with medium-aged cheeses. A few years after the harvest it becomes an ideal meditation companion.
