ORIGIN
Vineyards owned by the winery, trained with spurred cordon on sandy soils, from granite decay, 250 meters above sea level.
PROCESSING
Manual harvest of the grapes, which are pressed whole immediately after harvesting and then vinified as white. After soft pressing, the must remains at a low temperature for a few days in stainless steel tanks, before starting fermentation. It matures for approximately two weeks at a controlled temperature of 12-13 °C. Finally it refines for a few months in steel before being put on the market. It can evolve well and be consumed up to three years after the harvest.
CHARACTERISTICS
Color: Pale pink.
Perfume: intense of exotic fruit. Slightly citrusy and with hints of small red fruits.
Taste: dry, medium-savory and fresh. Well balanced and persistent.
COMBINATIONS
Excellent when paired with fish-based appetizers and fresh cheeses.
Also good accompaniment to seafood first courses and mixed fried fish.
