PROCESSING AND AGING
The bunches are harvested at different times depending on the degree of ripeness, and then undergo de-stemming and pressing for red vinification, with maceration of the skins in the must for about fourteen days, during which alcoholic fermentation also takes place, in stainless steel containers at controlled temperature. It is aged in steel containers and fine French oak barrels, before the final refinement in the bottle.
Color: intense ruby red, with light garnet reflections
Bouquet: it has a long bouquet, of particular finesse, with hints of red fruits and spices.
Taste: the taste is broad, velvety, soft, rightly tannic.
It goes well with dishes and roasts of the land cuisine based on red meats and game, and aged cheeses.
