PROCESSING AND AGING
Collection and selection of the grapes, subjected to soft pressing and the must fermented for about twenty days at low temperatures, followed by maturation of the wine exclusively in steel, to preserve the freshness and purity of the aromas to the maximum. At the end of the alcoholic fermentation, it matures for a few months in stainless steel containers, in order to increase its finesse and complexity, before bottling and final refinement in glass.
Color: straw yellow with a slightly greenish reflection.
Bouquet: subtle, intense and delicate, with good primary and secondary aromas.
Taste: fresh, dry and dry, savory with a pleasant delicacy and finesse.
Seafood appetizers, fregola with shellfish, fish soups, sea bass with artichokes, soft and medium-aged cheeses.
