PROCESSING AND AGING
Crushing-destemming, soft pressing, fermentation in stainless steel vats at a controlled temperature (16-18 °). Refinement in steel or vitrified cement vats for a few months, followed by two months of refinement in the bottle. If well preserved, it matures well in the bottle for several years.
Color: straw yellow with greenish reflections, almost brilliant luster.
Bouquet: intense, mineral, with notes of citrus and yellow pulp fruit.
Taste: dry, intense, savory and persistent.
Perfect as an aperitif. We recommend the combination with appetizers and fish first courses.
