PROCESSING AND AGING
The grapes undergo a destemming and crushing followed by a soft pressing. The must obtained is clarified by cold static settling and the clean fraction is inoculated with selected yeasts. Fermentation is conducted at temperatures of 14-16 º C for about fourteen days. After fermentation, the wine remains in contact with its noble lees for about 45 days and bottled in the spring following the harvest to keep intact its freshness characteristics.
Color: pale straw yellow, with light greenish reflections.
Bouquet: intense floral, fresh and fruity.
Taste: intense and persistent, sour, with a delicate and characteristic bitter vein on the finish.
