ORIGIN
Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestones of Miocene origin, medium hilly position, sub-arid climate.
PROCESSING
The grapes undergo destemming and crushing followed by soft pressing. The must obtained is clarified by cold static decantation and the clean fraction is inoculated with selected yeasts. Fermentation is carried out at temperatures of 14-16°C for approximately fourteen days. Once fermentation is complete, the wine remains in contact with its noble lees for approximately 45 days and is bottled in the spring following the harvest to keep its freshness characteristics intact.
CHARACTERISTICS
Color: pale straw yellow, with light greenish reflections.
Perfume: intense floral, fresh and fruity.
Taste: intense and persistent, acidic, with a delicate and characteristic bitterish vein on the finish.
COMBINATIONS
Perfect in combination with seafood appetizers, grilled meats and fish soups.
