ORIGIN
Alluvial soils, with a sandy-loam texture. The lands of the Tirso Valley are called "Bennaxi".
PROCESSING
White vinification with spontaneous fermentation in a concrete tank. The must must have an initial sugar concentration of at least 21° to guarantee the future alcohol content necessary for refinement and maturation. The spring following the harvest, the new wine is transferred to oak and chestnut barrels of different sizes, which are purposely left full, so that its biological refinement under "flor" yeasts can begin, the same yeasts that conducted the alcoholic fermentation . The maturation period must not last less than 8 years.
CHARACTERISTICS
Color: golden yellow tending to amber.
Perfume: typical and delicate, a hint of almond blossom is distinctly appreciated.
Taste: on the palate it is subtle and delicately bitter.
COMBINATIONS
Excellent as an aperitif, but also as a dessert. It enhances its qualities even more if it is accompanied by almond-based sweets or pastries.
