The name Bessìu comes from Sardinian and means "Going Out". Cantina Audarya chose this name to highlight the fact that despite the long aging in steel, this wine is extremely delicate and elegant, just like the fresh breeze of the early morning, when you "go out" into the vineyard.

ORIGIN
15 year old vineyards trained as low espalier saplings. The soils are calcareous-clayey at 160 meters above sea level, "Su Stani", Serdiana.
PROCESSING
Once harvested, the grapes undergo soft pressing and cold decanting of the must. The free-run must is then selected and fermented in steel vats at low temperatures to enhance the characteristics of the terroir. The production cycle ends with 8 months of refinement in steel vats on the fine lees.

Color: straw yellow with greenish reflections.
Perfume: fragrant nose, rich in Mediterranean scrub.
Taste: enveloping, persistent and balanced.
COMBINATIONS
Bessiu pairs well with seafood appetizers, mature cheeses and fish-based first courses. We recommend trying it with delicate white meats such as Rabbit cacciatore.
