PROCESSING
The manual harvest takes place late, when the grapes are richer in sugar. The grapes are then pressed and the must left to macerate cold with the pomace for a few hours. Once drawn off, the alcoholic fermentation proceeds with selected yeasts in tonneaux at a controlled temperature, to enrich its structure.
CHARACTERISTICS
Color: bright golden yellow.
Bouquet: rich and intense, hints of flowers and white fruit, aromatic herbs, sweet spices and vanilla.
Taste: soft and warm, enveloping, savory and fruity, long-lasting.
COMBINATIONS
Excellent with delicate first courses and fish-based second courses such as baked salmon.
