PROCESSING
Long maceration of 30 days at 25°C. The malolactic fermentation completes and the subsequent refinement on the fine lees, in thermo-conditioned steel vats in order to enhance the typical aromatic component of the vine.
CHARACTERISTICS
Color: intense ruby red.
Perfume: slightly spicy with hints of very ripe red fruit.
Taste: structured, warm and persistent.
COMBINATIONS
Meats and first courses from the land, medium-long matured Sardinian pecorino. Roasted pork and lamb seasoned with myrtle and juniper, red ox.
