GRAPE VARIETY Vermentino

ORIGIN
Vineyards trained in espalier with Guyot pruning, on granite weathering soils, which give the wine the typical flavor of Vermentino di Gallura, located between 200 and 400 meters above sea level.
PROCESSING
Manual harvest of the grapes, brought to the cellar for soft pressing. The free-run must is then sent to vinification with selected yeasts, in stainless steel containers at a controlled temperature of around 17° C. Once vinification is completed, the wine matures in steel and in vitrified concrete tanks at a controlled temperature for a few months, before of bottle refinement and marketing.
CHARACTERISTICS
Color: straw yellow
Perfume: notes of white flowers such as honeysuckle and fresh white pulp fruit, Mediterranean scrub herbs and sea breeze.
Taste: savory and fresh, with a certain structure and a discreet softness, fine aromas, good intensity and persistence.
COMBINATIONS
Elibaria is a pleasant white perfect as an aperitif, perhaps accompanied by small salmon croutons. It can give its best at the table, with refined seafood dishes such as seafood risotto.
