GRAPES Vermentino

ORIGIN
The winery's vineyards are grown using the espalier system with Guyot pruning, located on hilly terrain at around 200 m above sea level. The soil has a good calcareous structure with small clayey fractions.
PROCESSING
Grapes are harvested by hand and, once they arrive in the cellar, are subjected to soft pressing to obtain the free-run must, which is then started on alcoholic fermentation with the inoculation of selected yeasts, in stainless steel containers at a controlled temperature of around 17° C. Tuvaoes always matures in steel containers, and only a small part, five percent, in French oak barriques.
CHARACTERISTICS
Colour: Rather intense straw yellow, with greenish reflections, brilliant
Aroma: Good intensity and persistence with floral and vegetal hints. Notes of herbs, wild flowers and tomato leaf stand out.
Taste: fresh thanks to its innate acidity, warm and soft.
COMBINATIONS
Tuvaoes is a white wine perfect as an aperitif, but it goes well with many seafood dishes, especially mixed grills, shellfish and seafood.
