Vineyards owned by the winery, grown counter-espalier with Guyot pruning under organic farming.
PROCESSING
Once harvested, the grapes are vinified in steel with maceration of the pomace for 8-10 days at a controlled temperature of 25-26°C and frequent pumping over. Refines in steel for 6 months on its own yeasts.
CHARACTERISTICS
Color: intense ruby red with violet reflections.
Perfume: intense notes of red fruits and flowers, delicate herbaceous notes.
Taste: fresh and savory, delicately tannic, good balance and medium structure.
COMBINATIONS
It goes perfectly with first courses with ragù, white meats such as 'succhittu' rabbit, and medium-aged cheeses.
