GRAPE VARIETY Vermentino

ORIGIN
Vineyards located in the Sulcis area, in the south-west end of Sardinia.
PROCESSING
The grapes are cooled to 4°C and macerated for approximately 12 hours before soft pressing and fermentation at 18 - 20°C. A small part is fermented and aged in oak barriques. This is followed by aging for 7 months on the noble lees and at least a further 2 months in the bottle.
CHARACTERISTICS
Color: Young golden yellow with citrine reflections; fat and firm.
Perfume: Intensity and complexity. ripe fruit, cooked apples, jasmine, with light notes of vanilla and English toffee.
Taste: Full and very elegant entry. the glycerine contribution creates a silky texture that forms harmony and balance in the encounter with acidity and mineral salts. Long and clean finish.
COMBINATIONS
First courses with strong flavours, grilled fatty fish, white meats, medium-aged cheeses.
