PROCESSING
Vinification with soft pressing and natural cold decantation. It ferments slowly in cement at a controlled temperature. This is followed by 7 months of refinement on the fine lees inside a small ovoid concrete vat, in order to mature and obtain important structure and minerality.
CHARACTERISTICS
Color: golden straw yellow
Perfume: aromas of peach blossom and pear
Taste: savory and slightly aromatic, in a centered and balanced context
COMBINATIONS
It goes well with slightly mature cheeses, but also spaghetti, clams and bottarga, well-seasoned fish.
