The Cannonau di Sardegna Nepente di Oliena is a DOC red wine which, to be defined as such, must be produced from Cannonau grapes grown in the municipality from Oliena.

ORIGIN
The winery's own vineyards, the oldest of the company, over thirty years old, trained as saplings on the slopes of Monte Corrasi, on granite disintegration soils.
PROCESSING
Vinification at controlled temperature with soft punching down and delestage. Maceration lasts for about 20 days, for optimal extraction of anthocyanins. Refinement follows in 225-liter oak barriques for about a year, then in bottle for 6 months.
CHARACTERISTICS
Color: garnet red with scarlet reflections
Aroma: intense and persistent bouquet with hints of vanilla and cinnamon and a spicy finish, with clear hints of Mediterranean scrub
Taste: well-rounded tannins and discreet acidity and softness
COMBINATIONS
Pro Vois is a red wine with great structure, which prefers to be paired with complex and well-seasoned meat dishes, such as game, or with intense, fatty and mature cheeses.
