Vineyards owned by Cantina Audarya, grown as saplings on calcareous clay soils in the Serdiana countryside.
PROCESSING
After a short cold maceration of the grapes, fermentation takes place in steel vats at a controlled temperature, 15-18 days at 23°C. Refinement on fine lees for a natural stabilization of the wine.
CHARACTERISTICS
Color: ruby red with a purple edge.
Aroma: intense with light vegetal notes typical of the grape variety.
Taste: fresh and pleasantly soft, well balanced.
COMBINATIONS
Monica Audarya is a red wine excellent as an aperitif to accompany semi-mature cheeses and traditional cured meats. At the table it pairs well with first courses such as tortellini in broth and delicate second courses based on white meats. Ideal with a typical dish of the Sardinian tradition such as suckling pig cooked on a spit and flavored with myrtle leaves.
