PROCESSING AND AGING
After the crushing-destemming follows the maceration at controlled temperature, with the grafting of selected yeasts, which lasts from 8 to 10 days. After this phase, the fermentation continues in stainless steel vats at controlled temperature around 22/24. We proceed to read clarifications, leaving the wine rest for a few days. Aging continues for about 4 months in underground cement vat and then continue in 1000 liter barrels for about 2 years and again two months in stainless steel. Then the wine will be bottled to complete the aging in about 3/4 months.
Color: iridescent between ruby red and garnet.
Bouquet: fruit and spices alternate on the nose, also highlighting touches of rose petals.
Taste: there is a strong sip, assisted by a powerful tannin, in the integration phase.
Throughout the meal, it goes perfectly with feathered game, roast meats, braised meats and aged cheeses.
