PROCESSING
Red fermentation and vinification. After a 5-day maceration, the skins remain soaked for another 10 days in the fermenting must at a temperature of approximately 24°C. Aging for 6 months in a concrete tank, followed by refinement in the bottle for a few months before being put on the market, deliberately young.
CHARACTERISTICS
Color: intense ruby red, with violet reflections.
Perfume: intense, complex, has fruity, floral and Mediterranean scrub scents.
Taste: dry, fresh and with great structure. Its full, intense, warm taste, good acidity and marked flavor give this wine great persistence.
COMBINATIONS
Excellent paired with a platter of cured meats and mature cheeses, but also with red meats and game. Try it with important dishes based on fresh red tuna.
