ORIGIN
Territory surrounding the winery, Dolianova, characterized by medium-textured soils composed of clayey limestones of Miocene origin, medium hilly location, sub-arid climate.
PROCESSING
The grapes, after destemming and crushing, are sent to fermentation which lasts for 8-10 days at a temperature of 26°C. Upon racking, the wine is decanted into vitrified concrete tanks where it undergoes malolactic fermentation and is subsequently aged for a few months.
CHARACTERISTICS
Color: intense ruby red, with garnet reflections as aging progresses.
Bouquet: intense and persistent, ethereal, vinous, with hints of berries.
Taste: warm and enveloping, full-bodied, rightly tannic.
COMBINATIONS
Ideal for roasts, game and cheeses with a strong, spicy flavour.
