PROCESSING AND AGING
The manual harvest is followed by de-stemming-crushing and maceration of the skins in the must in the presence of native yeasts, for about two weeks. After alcoholic fermentation, Mamuthone rests in large barrels - about forty hectoliters - for twelve months; before being bottled it does not undergo filtration.
FEATURES
Color: Dark ruby red.
Bouquet: expresses the density of Cannonau thanks to notes of ripe fruit, plum and cherry, and spicy hints of myrtle, vanilla, white pepper.
Taste: welcoming, generous and very long. A tannic texture of great softness outlines the features up to a closure on the fruit, of great persistence.
FOOD PAIRINGS
It is a wine for the whole meal that goes well with rich preparations based on red meats and very aged cheeses. Perfect with pizza.
