ORIGIN
The winery's vineyards are grown on espaliers on clay soils with a significant presence of limestone and sand , in the Sisini Estates, in Sulcis.
PROCESSING
The grapes are harvested by hand and transported to the cellar, where they undergo red vinification by destemming-crushing and fermentation at a controlled temperature for about two weeks, with the marc left to macerate in the must. Cardanera ages in cement tanks for a few months, during which malolactic fermentation takes place.
CHARACTERISTICS
Color: intense ruby red with slightly purple reflections
Aroma: intense with evident notes of Mediterranean scrub and red fruits.
Taste: fresh, savoury, with fine and balanced tannins.
COMBINATIONS
Cardanera is excellent with first courses with rich meat-based sauces, such as lasagna or pasta with ragù. Stewed meats, second courses of poultry and roast meats. Medium-aged cheeses.
