PROCESSING AND AGING
The grapes are subjected to red vinification, with maceration of the marc in the must and simultaneous alcoholic fermentation for almost two weeks. The malolactic fermentation is carried out in cement vats; subsequently, it ages in oak barriques for twelve months, in order to increase complexity, softness and structure, before the final refinement in the bottle before being put on the market.
Color: ruby red with violet reflections.
Bouquet: the nose expresses beautiful notes of ripe fruit and blackberry jam.
Taste: a trace of vanilla and white pepper opens to a full, harmonious and warm taste, characterized by a beautiful harmony and persistence.
It goes well with well-seasoned first courses, grilled tuna belly, roast suckling pig and kid, well-aged cheeses.
