PROCESSING AND AGING
After destemming-crushing, the must is left to ferment with the marc in stainless steel containers for fifteen days; after racking, fermentation continues, again in steel. The maturation in large cement vats follows for a few months, during which there is also the malolactic fermentation; this phase is followed by refinement in the bottle for three months, before being put on the market.

Color: lively and bright ruby red.
Bouquet: sensations of fresh fruit, cherries, currants and blueberries, framed by nuances of Mediterranean herbs and memories of saltiness.
Taste: pleasant structure, moderate softness and alcohol content, refreshed by a good freshness and a strong sapidity.

Aperitif wine. It is then accompanied by first courses of land or second courses of meat such as grilled pork.
