Vineyards owned by the Audarya winery, trained as saplings on calcareous clay soils.
PROCESSING
After a short cold maceration of the grapes, fermentation takes place in steel vats at a controlled temperature, 15-18 days at 23°C. Aging on fine lees for a natural stabilization of the wine.
CHARACTERISTICS
Colour: ruby red with a purplish edge.
Bouquet: intense with light vegetal notes typical of the vine.
Taste: fresh and pleasantly soft, well balanced.
COMBINATIONS
Pasta with grouper ragout, slice of red tuna. Stewed lamb, goat cheese cream.
