The name Bessìu comes from Sardinian and means "Exited". The Audarya winery chose this name to highlight the fact that despite the long aging in steel, this wine is extremely delicate and elegant, just like the fresh breeze of the early morning, when you "go out" into the vineyard.

15-year-old vines trained as saplings with low espalier. The soils are calcareous-clayey at 160 meters above sea level, "Su Stani", Serdiana.
PROCESSING
Once harvested, the grapes undergo soft pressing and cold decantation of the must. The free-run must is then selected, which ferments in steel vats at low temperatures, to enhance the characteristics of the terroir. The production cycle ends with 8 months of aging in steel vats on the fine lees.

Colour: straw yellow with greenish reflections.
Nose: fragrant nose, rich in Mediterranean scrub.
Taste: enveloping, persistent and balanced.
COMBINATIONS
It goes well with seafood appetizers, mature cheeses and fish first courses. We recommend trying it together with delicate white meats such as rabbit hunter style.
