Le Anfore Biointegral Cannonau di Sardegna 2018
The Le Anfore selection follows the BioIntegral method, an ethical agriculture protocol born from the thought of Stefano Casadei, Elena's father. Bio-integral means protecting the environment, working in balance between the recovery of ancient agronomic methods and modern scientific knowledge. This implies the recovery of ancient practices, such as winemaking and aging in amphora: a method in line with the approach of respect for the environment and for the wines that the winery produces. The amphora, the use of which has its roots in antiquity, contributes in a fundamental way to the characterization of wines, amplifying the peculiarities of each terroir, variety and vintage.

Vineyards owned by the winery located on clayey-sandy soils of calcareous and basaltic origin, Gergei.
PROCESSING AND AGING
The destemming and a soft pressing precede the fermentation which takes place strictly without added yeasts. The wine remains in contact with its skins for about 25 days. At the end of the malolactic fermentation, the wine is decanted and the refinement continues in amphora for another 8 months.

Bouquet: the Sardinian Mediterranean scrub stands out on the nose: myrtle, licorice, cherries.
Taste: complex, savory and tannic.

Excellent paired with the typical roast suckling pig and ground first courses, also ideal if paired with aged sheep cheeses and red meats in general.
