PROCESSING AND AGING
Destemming, cold maceration for about 6 hours. After racking, the must obtained is clarified by cold static settling and the clean fraction is inoculated with selected yeasts. It ferments at a temperature of 14 oC for about fourteen days. The wine is then racked and stored at a low temperature to keep its characteristics intact. It is a wine that offers the best of its characteristics if consumed within the year following the harvest.
Color: light pink.
Bouquet: delicate and elegant with notes of cherry and strawberry.
Taste: on the palate it is fine, fruity but with a good structure and persistence.
Accompanies delicate earthen appetizers, cold cuts, risottos and grilled white meats.
