PROCESSING
Destemming-crushing, cold maceration for about 6 hours. After racking, the must obtained is clarified by cold static decantation and the clean fraction is inoculated with selected yeasts. It ferments at a temperature of 14°C for approximately fourteen days. The wine is then decanted and stored at a low temperature to keep its characteristics intact. It is a wine that offers the best of its characteristics if consumed within the year following the harvest.
CHARACTERISTICS
Color: light pink.
Perfume: delicate and elegant with notes of cherry and strawberry.
Taste: on the palate it is fine, fruity but with a good structure and persistence.
COMBINATIONS
Accompanies delicate land appetizers, cured meats, risottos and grilled white meats.
