Vineyards grown on granite disintegration soils, located in the Monti area (OT).
PROCESSING
The vinification begins with the destemming and subsequent soft pressing. It ferments at a controlled temperature between 16-18°C. Cooling of the must to conclude the fermentation at -3° -4°C. Filtration and sparkling wine production with the Martinotti-Charmat method with natural fermentation.
CHARACTERISTICS
Colour: straw yellow, rich and subtle perlage.
Aroma: pleasantly aromatic and fruity.
Taste: fresh and mineral sip, balanced and savoury on the finish.
COMBINATIONS
Sangusta Brut is a perfect aperitif sparkling wine, to accompany cold cuts such as guanciale, creamy and delicate cheeses. At the table it is suitable for seafood dishes such as raw seafood and shellfish, fried calamari, pizza not too seasoned, ravioli with delicate fish fillings.
