ORIGIN

Vineyards grown on granite weathering soils, located near Monti (OT).

PROCESSING

The vinification begins with destemming and subsequent soft pressing. It ferments at a controlled temperature between 16-18°C. Cooling of the must to conclude the fermentation at -3° -4°C. Filtration and sparkling winemaking with the Charmat method of natural fermentation.

CHARACTERISTICS

Colour: straw yellow, rich and subtle perlage.

Perfume: pleasantly aromatic and fruity.

Taste: fresh and mineral sip, balanced and savory on the finish.

COMBINATIONS

Perfect sparkling wine as an aperitif, to accompany cured meats such as bacon, creamy and delicate cheeses. Suitable for seafood dishes such as seafood and raw shellfish, fried calamari, lightly seasoned pizza, ravioli with delicate fish fillings.
