The Nieddera, which due to its polyphenolic richness (niedda in Sardinian means black, referring to the intense purple of the must), its freshness and its lower yield in sugars so much lends itself to rosé vinification.

PROCESSING AND AGING
White vinification, the clear must ferments in steel at low temperatures. Refine for a month on its noblest lees acquiring intensity of aromas and structure and then go into the bottle soon.
