GRAPES Bovale

ORIGIN
Vineyards located right near the winery, grown using the espalier system with spurred cordon and guyot pruning, on calcareous soils rich in clay.
PROCESSING
The harvested grapes are subjected to destemming and crushing, followed by fermentation in steel at a controlled temperature of 22 °C and maceration for 5 days, with soft pressing. It is refined in steel for 6 months.
CHARACTERISTICS
Color: bright, clear and intense ruby red.
Aroma: beautiful intensity, hints of wild cherries and blackberries, which then give way to notes of Mediterranean scrub.
Taste: great freshness, sip characterized by intriguing iodine notes.
COMBINATIONS
Su Diterra is a red wine excellent as an aperitif with typical cured meats. At the table we recommend trying it with the typical 'cordula' stew with olives. It pairs perfectly with red meat dishes but also with first courses with important condiments.
