PROCESSING AND AGING
The grapes are harvested by hand at perfect ripeness, during the early hours of the morning, and quickly transported to the cellar, where they are subjected to destemming-crushing and maceration of the skins in the must at a controlled temperature for ten days, in stainless steel containers. At the end of the alcoholic fermentation, it matures for eight months in second and third passage wooden barrels, a phase in which it also undergoes malolactic fermentation, in order to increase its softness.
Color: dark ruby red, almost impenetrable.
Bouquet: intense of small red fruits, blackberry and cherry jam combined with spicy notes of pepper and leather.
Taste: Soft in tannins and full-bodied, enveloping. Long persistence.
Excellent to accompany grilled or braised red meats, savory and spicy first courses, aged cheeses.
