Villa di Chiesa is the result of a careful selection, the right blend between typical grapes and the noble Chardonnay, grown in counter-espalier on the hills that overlook the sea from lower Sulcis.
PROCESSING
During the harvest, the best bunches are selected, picked by hand and transported immediately to the cellar. The winemaking begins with the soft pressing of the grapes and the obtaining of the free-run must, which is fermented in barriques. Once the alcoholic fermentation is complete, the wine continues to mature in barriques on its own yeasts, with frequent batonnage, in order to favor the extraction of all the aromatic substances from them. Finally it ages for six months in the bottle, before being put on the market.
CHARACTERISTICS
Colour: shiny straw yellow tinged with gold and green.
Nose: delicate aromas of exotic fruit combined with stronger notes of butter and banana.
Taste: soft with good flavor, persistent. Final with pleasant notes of vanilla and citrus fruits, the result of a perfect integration between the wine and the barrique.
COMBINATIONS
It enhances dishes based on both white and red meat, but also roasted fish and fish in sauce. Also perfect together with medium-aged cheeses.
