Vineyards located in the surroundings of the winery in Sorso (SS).
PROCESSING
The Charmat medio method is used for the sparkling wine making process. The vinification is done by pressing the whole bunch with cold static sedimentation. It ferments in reduction, at a controlled temperature of 12°C. The foaming is very slow with the inoculation of selected yeasts. It is refined in an autoclave, in contact with the yeast in agitation for 45 days.
CHARACTERISTICS
Color: Peach blossom pink. Very fine and persistent perlage in the glass.
Aroma: Delicate and fresh floral and fruity sensations expressed in the notes of strawberry and blackcurrant, suffused with a light minerality.
Taste: creamy and persistent, fresh and saline, with a subtle carbonic pungency that evokes fresh ginger.
COMBINATIONS
Perfect aperitif sparkling wine, to accompany cold cuts such as guanciale, creamy and delicate cheeses. Suitable for dishes such as fried courgette flowers, fried shrimp, pizza not too seasoned, ravioli with delicate fillings.
