PROCESSING AND AGING
The vinification takes place through whole cluster pressing with cold static sedimentation. Ferments in reduction, at a controlled temperature of 12 ° C. The second fermentation is very slow with the inoculation of selected yeasts. Refine in autoclave, in contact with mother yeast for 45 days. The method used is Medium Charmat.
Color: peach blossom pink. Very fine and persistent perlage.
Bouquet: delicate floral, fruity and fresh sensations declined in the notes of strawberry and currant, suffused with a light minerality.
Taste: creamy and persistent, fresh and salty, with a subtle carbonic pungency reminiscent of fresh ginger.
Sparkling wine perfect as an aperitif, to be paired with cold cuts such as bacon and delicate cheeses. Suitable for dishes such as fried zucchini flowers, fried shrimps, not too seasoned pizzas, ravioli with delicate fillings.
