ORIGIN
The area surrounding the winery, Dolianova, is characterised by medium-textured soils composed of clayey limestone of Miocene origin, medium hilly position, sub-arid climate.
PROCESSING
The grapes, after destemming and crushing, are sent to fermentation which lasts for 8-10 days at a temperature of 26°C. After racking, the wine is transferred into glass-lined cement tanks where it undergoes malolactic fermentation and is subsequently aged for several months.
CHARACTERISTICS
Color: intense ruby red, with garnet reflections as it ages.
Aroma: intense and persistent, ethereal, vinous, with hints of wild berries.
Taste: warm and enveloping, full-bodied, rightly tannic.
COMBINATIONS
Ideal for roasts, game and cheeses with a strong, spicy flavour.
