PROCESSING AN AGING
The grapes, after destemming-crushing, are started to ferment which lasts for 8-10 days at a temperature of 26 º C. At the racking the wine is racked in vitrified concrete tanks where malolactic fermentation takes place and, It is then aged for several months.
Color: intense ruby red, with garnet reflections as it ages.
Bouquet: intense and persistent, with hints of wild berries.
Taste: warm and enveloping, full-bodied, rightly tannic.
Ideal for roasts, cheeses with a strong and spicy taste.
