PROCESSING
The harvest takes place between the end of August and the beginning of September, in order to reach the right level of ripeness for each bunch. After harvesting, the grapes are subjected to destemming and pressing. The must, still in contact with the skins, is sent to ferment in stainless steel containers, at a temperature of 16°C; once the must has been pressed and the pomace has been removed, fermentation continues in the same conditions, until it comes to a natural stop. Su'Luci then matures in stainless steel containers for a period of approximately eight months, before bottling and final refinement.
CHARACTERISTICS
Color: intense and brilliant ocher yellow.
Perfume: honeyed notes, of withered white flowers and dried fruit.
Taste: Sweet notes and hints of candied orange and apricot jam, pleasant freshness that cleanses the palate and complements the long persistence.
COMBINATIONS
Great as an accompaniment to typical Sardinian desserts and blue cheeses, a good reading companion, to try on goat's cheese with drops of strawberry tree honey.
