GRAPE VARIETY: Late harvested Vermentino

ORIGIN
The winery's own vineyards, trained using the espalier system and Guyot pruning, are located on medium-textured, sandy, granite-clad soils in the Arzachena area.
PROCESSING
Made from the same grapes used for Sciala, but harvested later. The must remains in contact with the skins for 12-24 hours at a temperature below 10°C (50°F). Fermentation takes place half in large, untoasted French oak barrels and half in steel and concrete tanks. The blend matures on its own yeasts in steel and concrete tanks for six months. Finally, it ages in bottle for at least nine months.
CHARACTERISTICS
Color: straw yellow with golden reflections.
Aroma: intense bouquet with notes of ripe fruit and Mediterranean scrub.
Taste: soft, long, broad and persistent, with fruity hints, mineral and tertiary notes.
COMBINATIONS
Montidimola It is an excellent white wine with seafood, but it is also perfect with delicate white meat dishes, risottos and first courses based on aromatic ingredients such as mushrooms and truffles.
